I am not a huge fan of lasagna with red sauce. I don’t know what it is, but I rarely make it. But when it comes to a lasagna with béchamel sauce (white sauce made with butter and flour) I am totally on board. This butternut squash lasagna is the perfect example - layers of butternut squash, creamy béchamel sauce and cheese makes one delicious lasagna.

Sometimes when you don't want a heavy hamburger, a good ol' veggie burger with all of the fixings totally hits the spot. When I first moved to Nashville I had a version of this veggie burger a local vegan restaurant Avo. I loved their use of lentils and walnuts to create a savory vegetable based burger.
It took me a minute to get this recipe developed and posted. I kept threatening to make it for Fridge Foraging but it was never chosen. Since there was a lot of feedback that people still wanted it, I decided to finally develop it.
We had it on a Friday night and watched a movie and I swear it tasted just like takeout, only a little healthier.

I recently had the chance to experience a street corn Caesar salad at 1000 North in Jupiter Florida. I am a huge fan of Caesar salads and who doesn't love Mexican Street corn! One of my favorite stalls at the farmers market each week is the mushroom stand. It is guaranteed to wow and amaze anyone who passes by. The gentleman who mans the stand always has the usual mushrooms like shiitake or oyster but often times he will have the most gorgeous unusual mushrooms that are so unique looking, they almost look like they don’t belong on this planet! From creamy chanterelles, to lion’s mane, to the fluorescent orange of lobster mushrooms, I love that almost no two mushrooms look alike.

Read MoreI am a big fan of pizza and could probably eat pizza (or tacos) pretty much everyday of the week. Although that sounds delicious, it is probably not the most healthy of diets. Enter caulfilower pizza. When I want pizza but want one that is a little more nutritious, this is what I turn to. Although it is not exactly like pizza dough, this cauliflower pizza is pretty darn close.
Feel free to put all of your favorite toppings on the crust. I like old school pizza sauce, cheese and basil but the sky is the limit in what you can top with pizza crust.

I love using coconut milk in so many dishes because it adds a sweet richness to whatever is begin cook - savory and sweet. And don't get me started on this spicy peanut situation. I could drink that sauce it is so freaking good. Peanut butter is mixed with lime juice, soy sauce and all sorts of other yummy flavors. Be prepared to be obsessed.

I don't know about you, but sometimes when I eat soup I am pretty much still hungry almost immediately after finishing it. It is sometime not hearty enough and doesn't seem to fill me up.
