Warm Marinated Olives

Warm Marinated Olives 

  • 1 1/2 tsp. fennel seeds 
  • 1 cup olive oil
  • 1 lbs assorted olives, such as castleveltrano and black olives 
  • orange zest 
  • lemon zest
  • 2 to 3 Bay leaves
  • pinch of red pepper flakes 

In a small pot over low heat, toast the fennel seeds for about 30 seconds. Add the olive oil, olives, orange zest, lemon zest, bay leaves and red pepper flakes. Cook for about 3 to 4 minutes until warmed through. 

Serve warm or at room temperature.
