Skillet Cookie


Skillet Cookie Cake 

 

  • 2 cups all-purpose flour
  • 1 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 2 sticks unsalted butter, at room temperature
  • 1 1/4 cup brown sugar
  • 2 eggs
  • 1 egg yolk
  • 1 Tbs. vanilla 
  • 1 1/2 cups semi-sweet chocolate chips
  • Garnish with flaky sea salt and vanilla ice cream 

Pre-heat oven to 350°F.  Spray a 10" cast iron pan with non-stick spray (or any skillet would do). 

In a medium size bowl combine the flour, baking soda and salt. Set aside. 

In the bowl of a stand mixer, cream together the butter and sugar until light and creamy. Add the eggs, egg yolk and vanilla and mix until well combined. 

Add the flour mixture into the butter mixture and mix until just combined. Fold in the chocolate chips. 

Pour the batter into the prepared pan and smooth into an even layer. 

Bake the skillet cookie for about 25 - 35 minutes. Start checking on the cookie after 25 minutes - depending on how gooey you want the middle of the cookie. 

Makes 6 to 8 servings.
