The Ultimate Flourless Chocolate Cake 

Makes 1 cake 

  • 2/3 cup (or 150g) unsalted butter 

  • 7 oz dark chocolate chips or discs (or chopped chocolate bars)

  • 1 tsp salt 

  • 4 eggs, separated

  • 3/4 cup (150 g) granulated sugar, separated

  • ¼ cup coffee 


Preheat oven to 350°F and grease a 9” springform pan.

Melt butter, chocolate, and salt in a double boiler. Set aside 

In the bowl of a stand mixer add 4 egg yolks and half of the sugar and beat on high for 2 minutes.

Add coffee, vanilla, and ½ cup melted chocolate. Beat on low for 30 seconds. Slowly add remaining chocolate. 

Place chocolate mixture in a large bowl and clean mixing bowl 

Using a whisk attatchment, beat together egg whites and remaining sugar until soft peaks. 

Fold the egg whites into the chocolate mixture - Do not overmix 

Pour into a greased springform pan and bake for 30 minutes - do not over bake.

Let sit at room temperature overnight. Dust with cocoa powder before serving.
