Miso Maple Glazed Sheet Pan Salmon with Broccoli and Cabbage

  • 3 Tbs, maple syrup

  • 1 Tbs miso paste

  • 3 Tbs. rice vinegar

  • 2 tbs. soy sauce

  • 1 clove minced garlic

  • 1/4 cup olive oil

  • 2 Tbs. sesame oil

  • 4- 6 oz pieces of salmon

  • 1/2 lb broccoli, cut into bite sized florets

  • 1/2 cabbage, cut into wedges

  • Serve with rice or quinoa

Preheat oven to 450°F.

Place salmon in a shallow container skin side down.

In a small bowl mix together maple syrup, miso paste, soy sauce, vinegar, garlic and olive oil. Pour half of the mixture over the salmon and marinate for 20 minutes.

In another large bowl toss the brocolli and cabbage with the sesame oil and a sprinkle of salt and pepper.

Place on a parchment lined sheet tray and roast for 10 minutes. Remove and place the salmon on the sheet tray skin side down and continue roasting for another 10 - 12 minutes.

Remove when the salmon is flaky and the broccoli is fork tender.

Serve over rice and the remaining sauce on the side.
