Citrus Salad with Avocado, Goat Cheese, and Pistachios

  • 4 oranges

  • 1 shallot minced

  • 1/4 cup rice vinegar (or white wine vinegar)

  • 1 Tbs. honey

  • 1 tsp. Dijon mustard

  • pinch of kosher salt

  • 1/3 cup olive oil

  • 5 oz. little gem or butter lettuce

  • 1 avocado, diced

  • 1/4 cup toasted and chopped pistachios

  • 1/4 cup crumbled goat cheese

  • Serve on its own or with sauted shirmp or chicken

Supreme the oranges by cutting off the ends, removing the peel, and cutting out the individual segments with a pairing knife. Set the segments aside and squeeze any excess juice out of the remaining orange membrane in a small bowl.

Add the shallot, vinegar, mustard, honey, salt, and olive oil. Whisk well to create an emulsion.

Assemble the salad by placing the lettuce in a large bowl. Top with citrus segments, avocado, pistachios, and goat cheese. Mix well, taste for salt and pepper, and serve immediately.

Makes about 2 to 4 servings.
