Turmeric Turkey and Green Bean Stir Fry with a Soy Honey Sauce

  • 1/4 cup honey

  • 2 Tbs. soy sauce

  • 1 large (or 2 small) shallots, minced

  • 2 cloves minced garlic

  • 1 ½ teaspoons ground turmeric

  • 1 tablespoon coconut or canola oil

  • 1 ground turkey or chicken

  • 12 ounces green beans, cut into bite sized pieces

  • 1 lime, cut into wedges (optional)

  • Serve with fresh herbs over rice

In a small bowl mix together honey, soy sauce, and 1/3 cup water. Set aside.

In a large wok or pan heat 1 tbs. oil over medium heat. Add the ground turkey and cook until browned, about 4 to 5 minutes. Remove from the pan. In the same pan add the shallot, garlic, turmeric, and green beans and cook for about 2 to 3 minutes. Add the honey soy sauce mixture, stir well then place a lid on the pan for about 1 minutes to all for the green beans to steam. followed by the turkey and cook until the sauce is reduced.
