Thai Inspired Turkey Meatballs with Coconut Curry

  • 2 Tbs. neutral oil

  • 1 red onion, minced

  • kosher salt

  • 4 tsp. minced garlic, divided

  • 1 tsp. ground cumin

  • 1 tsp. ground coriander

  • 1 Tbs. minced ginger

  • 1 cup cilantro

  • 1 lb ground turkey

  • 1/2 cup dried breadcrumbs

  • 1 Tbs curry paste

  • 1 - 15 oz. can coconut milk

  • 1 1/4 cups vegetable stock

  • 2 Tbs. fish sauce

In a cast iron pan warm the oil over medium heat. Add onion and saute for about 4 to 6 minutes or until the onion is soft and translucent. Remove half of the onion and set aside. To the remaining onion in the pain, add half of the garlic, the cumin, coriander and big pinch of salt and cook for another 30 seconds. Remove from pan and place in a large bowl to allow to cool slightly.

Once cooled add the ginger, cilantro, sesame oil, turkey, and breadcrumbs. Mix well and form into meatballs - about 2 Tbs. each.

In the same pan that was used for the onion, warm remaining oil. Brown the meatballs over medium high heat. Remove and set aside.. To the same add the remaining garlic, followed by the curry paste and reserved onion and cook for 30 seconds. Add the coconut milk, stock, and fish sauce and mix well. Return the meatballs to the pan and cook for another 5 to 7 minutes or until meatballs are cooked through.

Serve meatballs on top of a rice, assorted vegetables, and a large drizzle of the coconut curry.
