One Pot Coconut Thai Inspired Curry

  • 1 Tbs. neutral oil (like avocado or vegetable oil )

  • 2 cloves minced garlic

  • 1 minced shallot

  • 1” piece of minced lemongrass OR 1 Tbs. minced ginger

  • 1 Tbs red curry paste

  • 1 - 15 oz. can coconut milk

  • 1 1/4 cups chicken or vegetable stock

  • 2 Tbs. fish sauce

  • 10 oz. favorite frozen store bought or homemade dumplings

  • Garnish with basil and lime wedges

In a Dutch oven heat oil over medium heat. Add garlic, shallot, and lemongrass and cook for 30 seconds. Add curry paste and cook for another 30 seconds. Add coconut milk, vegetable stock, and fish sauce and cook for 1 to 2 minutes. Add 1 bunch chopped bok choy and cook until barely wilted. 

Add the frozen wontons, cover, and cook for 3 to 4 minutes until the wontons are warmed through. (the time will vary depending on size of wontons, you can also boil separately in water until they float then put in the coconut broth)

Serve dish topped with fresh basil and lime wedges
