Spicy Citrus Shrimp Bowl with Orange and Avocado

For the marinade and dressing:

  • Juice of 1 orange

  • 1 Tbs. honey

  • 2 Tbs. gochujang

  • 1/4 cup soy sauce

  • 2 Tbs. lime juice

  • 1/4 cup vegetable oil

  • 2 Tbs. garlic

  • 1 Tbs. grated fresh ginger

For the shrimp:

  • 1 lb shrimp, peeled and de-veined

  • 1 orange, supreme

  • 1/2 cup diced cucumber

  • 1/2 avocado, diced

Garnish with fresh herbs like cilantro or mint and serve over rice

In a small bowl, combine the orange juice, honey, gochujang (or other favorite hot sauce) soy sauce, lime juice, and vegetable oil. Pour 1/4 of the mixtuer over the shrimp and toss well. Place in the refrigerator and let marinate for 15 minutes.

In a non-stick saute pan add the garlic, ginger and remaining vegetable oil. Saute for 30 seconds. Add remaining marinade to the pan and cook over low heat for about 2 to 3 minutes until the sauce thickens slightly. Remove from pan.

Warm the same pan over high heat. Add the shrimp and cook for about 30 seconds, flip and continue cooking on the other side. Toss shrimp in a little of the reduced marinade.

In a small bowl combine the cucumber, avocado, orange segments and a pinch of salt.

Serve the shrimp over rice along with a spoonful of the avocado and orange mixture. Serve with a side of the sauce.
