Ground Turkey with Green Beans and Rice Cakes

  • 2 cups rice cakes

  • 1/2 lb green beans

  • 1 lb ground turkey

  • 2 clove minced garlic

  • 2 shallots, thinly sliced

  • 1 Tbs. minced ginger

  • 1/3 cup soy

  • 2 Tbs. toasted sesame oil

In a large pot of boiling water add the rice cakes. Cook for 2 to 3 minutes then scoop out and run under cold water.

In the same pot, blanch the green beans for 2 to 3 minutes or until green beans are fork tender. Strain and put the green beans in an ice bath to cool completely. Remove and let dry.

In a large saute pan or wok, warm the vegetable oil over medium heat. Add the turkey and cookfor 3 to 5 mintues or until the turkey is cooked through and browned. Add the garlic, shallots, and ginger and cook for another 30 seconds. Add the soy sauce and sesame oil and toss well. Fold in the green beans and rice cakes and toss until everything is coated with the soy sauce and sesame oil.

Serve immediately with lime wedges and chili oil.

Makes 2 to 4 servings.
