Sesame Noodles with Broccoli
1 head of broccoli cut into bite sized florets
3 Tbs. toasted sesame oil, divided
3 cloves garlic, minced
1 Tbs. minced fresh garlic
1 package (about 14 oz) rice noodles
2 Tbs. soy sauce, plus more to taste
2 Tbs. rice vinegar
2 Tbs. tahini (or peanut butter)
1 tsp. honey
2 tsp. chili paste such as sriracha or gochujang
Top with chopped radish, toasted cashews and fresh herbs like mint or basil
Place rice noodles in a large bowl. Pour boiling water over the noodles and let sit for 5 minutes or until just barely soft. Strain and rinse with cold water to prevent further cooking. Set aside.
In a large skillet add 1 tablespoon sesame oil and heat over medium. Add the broccoli and cook for 8 to 10 minutes or until broccoli is fork tender . Remove and set aside. In the same pan add the remaining sesame oil, followed by the garlic and ginger and cook over medium heat for about 30 seconds. Add the soy sauce, rice vinegar, tahini, honey, and chili paste. Whisk well until a sauce is formed, adding 1/4 cup of water at a time to thin it out and create a creamy sauce. Toss the rice noodles in the sauce and taste if more soy sauce is needed. Serve topped with fresh herbs like mint or basil, toasted cashews, and thinly sliced radish.
