One Pot Pasta with Sun Dried Tomatoes and Burrata

With this baby on the way I have started to think more about easy cooking. I have a feeling that - for a little while anyway - the days of leisurely cooking in the kitchen may be over.  I have so many friends who say they don't have time to cook or are too busy with their kids to make dinner. Well this one if for them! It might be one of the easiest one pot pastas out there and it all comes together in less that 20 minutes. 15 if you can get that water boiling faster. So keep a lookout for more one pan wonders and sheet pan suppers, I am super excited to develop and share more of those recipe. 

Couple notes on the recipe. First feel free to use any type of pasta besides penne but make sure it is bite sized rather than something like spaghetti. Also if you want to make this completely vegetarian either skip the Parmesan cheese rind (since many Parmesan cheeses are not vegetarian) or seek out vegetarian Parm. Lastly, burrata works best in this recipe because of the creamy center but you could also just use Parmesan cheese or fold in a little mascarpone cheese to create that creaminess.

One Pot Pasta with Sun Dried Tomatoes and Burrata

  • 1 lb. penne pasta (or other small bite-sized pasta) 
  • 1/2 onion, diced
  • 1 cup crushed tomatoes 
  • 1  - 8.5 oz. jar sundried tomatoes, drained 
  • 1 large or 2 small Parmesan cheese rinds
  • kosher salt
  • 4 oz. burrata 
  • Garnish with basil and Parmesan cheese

In a large pot add the pasta, onion, tomatoes, sun dried tomatoes, parmesan cheese rind, and large pinch of salt. Add 5 cups of water and bring mixture to a boil. Once the pasta is at a boil, reduce heat to medium and continue cooking for about 9 to 12 minutes or until the water is mostly absorbed and the pasta is cooked through. 

Fold in burrata and another pinch of salt. Remove Parmesan cheese rind and garnish with basil and Parmesan cheese. 

Serves warm.
