Avocado, Tomato and Corn Salad

I have been eating this super healthy and delicious salad all summer long. It combines all the flavors I love in the summer: tomatoes, basil, avocado and fresh corn. I made this for my family recently and they went crazy for it, so I thought I would share it here too. When I first served it, I served it over a flank steak but I think it is hearty and tasty enough that is stands up all on its own. 

You could adapt the recipe and add in your favorite summer vegetable like zucchini or cucumber. It is also vegan, raw and super healthy.  


Avocado, Tomato and Corn Salad

  • 2 ears fresh corn, kernels removed 
  • 1 pint cherry tomatoes, cut in half 
  • 1/2 red onion, diced 
  • 1 avocado, peeled, seed removed and diced
  • 1 jalapeno, seeds removed and diced
  • Juice of two limes
  • 1/4 cup olive oil 
  • large pinch of salt
  • Garnish with basil 


In a large bowl combine the corn, tomatoes, onion, avocado, jalapeno and big pinch of salt. Give it a big stir then top with lime juice, olive oil and basil. 

Makes 4 to 6 servings.
