Fridge Foraging: One Pot Summertime Pasta

Every Wednesday on Instagram I do something called fridge foraging where I cook from whatever I have in my fridge. Thought I would share it here as well, especially since this was a great one!


One Pot Summertime Pasta 

  • 1 onion, thinly sliced

  • 4 Tbs. olive oil divided

  • 2 gloves garlic, minced

  • 1 lb. dried pasta

  • 2 cups cherry tomatoes, cut in half if they are large

  • 1 Parmesan cheese rind

  • 1/2 cup sun dried tomatoes, drained and roughly chopped 

  • Kosher salt

  • 1/4 cup fresh basil leaves, plus more for garnish

  • Dried red pepper flakes to taste

  • 2 Tbs. olive oil

  • 1 cup Parmesan cheese, shredded

Saute the onions in 2 Tbs. olive oil over medium heat in a large pot for about 4-6 minutes or until translucent.

Add the garlic and cook for another 30 seconds.

Place pasta, tomatoes, Parmesan cheese rind, sun dried tomatoes, pepper flakes, big pinch of salt and basil into the pot. Pour in 5 cups of water and bring to a boil. Reduce the heat to medium low and simmer for 9 minutes or until the pasta is cooked and the water has mostly evaporated. Top with remaining olive oil and Parmesan cheese. Taste for salt and garnish with basil.

Serve 4 to 6
