One Pot Pasta with Sun Dried Tomatoes and Burrata

With this baby on the way I have started to think more about easy cooking. I have a feeling that - for a little while anyway - the days of leisurely cooking in the kitchen may be over.  I have so many friends who say they don't have time to cook or are too busy with their kids to make dinner. Well this one if for them! It might be one of the easiest one pot pastas out there and it all comes together in less that 20 minutes. 15 if you can get that water boiling faster. So keep a lookout for more one pan wonders and sheet pan suppers, I am super excited to develop and share more of those recipe.

I get asked a lot what my are my favorite types of recipes. Do I love to bake, do I love to cook? Well here is the answer I love to bake, that was my first love as a kid, but creating recipes like this is what makes me truly excited. Recipes that are healthy, involve minimal clean up and come together in 30 minutes. I have mentioned this before but I think about my sister a lot when I am developeing these kinds of recipes. Will a mother of 2 be able to do this while wrangling those kiddos and managing a hangry husband? Yes, then it will pass the test!

Chicken Piccata

I get asked all the time to choose my favorite restaurant in LA. Well...that is a hard question. To be honest we haven't tried too many so I am not ready to officially nominate a favorite restaurant, but if I had to stay one of my favorite ones so far, it would be John and Vinny's.  Mostly because they serve this amazing chicken cutlet for lunch which is out of this world delicious. It literally is just a chicken cutlet, deep fried, served with a lemony salad dressing - so basically it is fried chicken.

Well it was technically called a stage and I didn't get paid, so I am not sure if you can call it work, but it sure seemed like work! Curried Ginger Carrot Soup with Crispy Chickpeas

I have posted this recipe for carrot soup before but  because I love it so much I wanted to adapt it slightly by adding some roasted chickpeas. I don't know about you, but sometimes when I eat soup I am pretty much still hungry almost immediately after finishing it. It is sometime not hearty enough and doesn't seem to fill me up. Since it is so good for you, I decided to top it with some roasted chickpeas adding some heartiness all the while still keeping it healthy.

Instant Pot Buffalo Chicken Sandwiches

I was cleaning out my fridge recently, something that I need to do more of,  and discovered a bottle of buffalo wing sauce. I bought this bottle for a recipe development project a couple weeks ago and since I was in search of a relatively healthy dinner, I decided to make some buffalo chicken in my Instant Pot.  I served it with a vinegar based cole slaw and a pretzel hamburger bun and it hit the spot.
